Our family tradition has always been to have pancakes on Sunday morning…sometimes we’d switch it up, and have waffles, or a big breakfast consisting of eggs, sausage, bacon, biscuits or toast, but we’d always do something special for breakfast on Sundays. The pancakes used to be made from the recipe on the Bisquick box, but we (OK, it was all David, he’s the cook around here!) tweaked the recipe to make the pancakes fluffy and tasty! Your entire family will love this pancake recipe.

1.) In a large bowl, mix all ingredients together using a hand mixer; the first 30 seconds on “low” setting, then 2 minutes on “medium” setting. | 2.) Preheat frying pan or griddle. | 3.) Use a ladle to measure the batter; I usually use 1/2-3/4 of a ladle per pancake, and it makes 6-7″ pancakes. | 4.) The pancake is ready to flip when little “craters” start appearing on top. If, after you flip it, the pancake is a little too dark, your heat is turned up too high. | 5.) Serve with butter & syrup, whipped cream or fruits. |
| VARIATION: Add 1/2 a bag of peanut butter or chocolate chips for a delicious variation! |
